2 tablespoons GAIA Cricket Protein Powder
2 tablespoons olive oil
1 small red onion, chopped
3 cups raw chopped vegetables of your choice (celery, carrots, red pepper, purple cabbage, corn, etc.)
1 tablespoon minced garlic
2 chipotle peppers, chopped finely
2 teaspoons ground cumin
2 tablespoons fresh basil, chopped finely
2 tablespoons honey
1 can diced tomatoes
2 cans beans of your choice, rinsed (kidney, white, pinto, black, garbanzo, etc)
2 teaspoons of red wine vinegar or lime juiceSalt and Pepper to taste
1. In a large pot, warm 2 TBSP of olive oil. Add chopped onion, vegetables, and salt and pepper. Stir for 5-10 minutes, until the onions turn clear and vegetables start becoming soft.
2. Add garlic, chipotle peppers, cumin, basil, honey and cricket protein powder. Add salt and pepper to taste. Continue cooking, and stir for one minute.
3. Add diced tomatoes and cans of beans. Simmer and stir periodically for 20 minutes, or until vegetables are cooked to your satisfaction.
